4 medium size Rio Red Grapefruit (about 4 c.)
2 containers (6 oz. each) H-E-B Fat Free Blended Lemon Yogurt
1/3 c. 0 calorie sweetener
8 fresh mint leaves
8 H-E-B Maraschino Cherries, drained
Peel grapefruit with knife. Use paring knife to separate each grapefruit segment from memb
rane. Place segments on sheet pan, cover with plastic wrap,
freeze 30 minutes.
Combine frozen grapefruit segments, yogurt and sweetener in food processor bowl; process 3
0 seconds or until smooth and creamy. Scoop into sherbet dishes;
freeze until ready to ser
ve. Garnish with a mint leaf and cherry before serving.
