Rio Grande Grapefruit Spinach & Chicken Salad

2 Tbsp. H-E-B Olive Oil

2 ruby grapefruits, peeled & sectioned with juice

1 avocado, peeled & sliced

1 pkg. (9 oz.) Fresh Express Spinach

2 thin slices red onion, rings separated

1 container (12 oz.) H-E-B Fully Cooked Shredded Chicken


Combine olive oil, grapefruit sections with their juice and avocado slices in a large sala
d bowl. Toss gently to coat.
Top grapefruit mixture with baby spinach, red onions and shredded chicken. Cover with plas
tic wrap and chill for 30 minutes or more. Toss before serving.
