Crock Pot Asian Apricot Glazed Pork Loin

2 (12 oz. each) H-E-B Pork Tenderloin

• salt and pepper

1 lemon, peeled, grated and juiced

1 Tbsp. grated fresh ginger

2 garlic cloves, chopped

6 green onions, cut into 2-inch sections

1 bag (6 oz.) H-E-B Dried Apricots, thin sliced

1 Tbsp. H-E-B Dijon Mustard

1/2 c. H-E-B Orange Juice


Season pork with salt and pepper. Heat heavy bottom skillet over high heat 3 minutes. Spra
y skillet with non-stick cooking spray and quickly brown pork on all sides (about 2 minute
s per side). Place in crock pot and top with grated lemon peel and juice, ginger, garlic,
green onions, apricots, Dijon mustard and orange juice.
Cover and cook on high heat 4 1/2 hours. Cut pork loin into 1-inch slices.
