Spicy Pork with Pasta and Green Beans
4 servings (2 c. each)
1 (12 oz.) pork tenderloin, thin sliced
1 Tbsp. canola oil
1/2 red pepper, cut into thin strips
2 garlic cloves, chopped
1/2 tsp. crushed red pepper (optional)
• salt and pepper
1 c. thin sliced sweet yellow onion
1/2 box H-E-B 100% Whole Wheat Pasta, break noodles in half
2 c. H-E-B Frozen Green Beans
Combine sliced pork, canola oil, red bell pepper, garlic and crushed red pepper in a bowl.
Season pork to taste with salt and pepper.
Heat a large heavy bottom skillet over high heat 3 minutes. Add seasoned pork mixture and
stir-fry 2 minutes. Add onions and broken pasta and stir-fry 2 more minutes. Add green bea
ns and 2 cups water to skillet and bring mixture to a boil over high heat. Cover, reduce h
eat to low and cook 10 minutes or until pasta is tender and has absorbed the liquid.
