Smoky Roasted Salsa

Ingredients

12 Roma tomatoes, halved

2 cloves garlic, unpeeled

1 small onion, quartered

1 jalapeño pepper, halved

1 1/2 Tbsp. H-E-B Olive Oil

1 tsp. Hill Country Fare Ground Cumin

1/2 tsp. salt

3 Tbsp. fresh lime juice

1/4 c. chopped fresh cilantro

Directions


Preheat broiler.
In a medium baking dish (try the Cocinaware Dutch Oven), place tomatoes, garlic, onion and
jalapeño pepper. Drizzle with olive oil.
Checking often, broil 20 – 25 minutes, or until outsides of vegetables are charred.
Remove vegetables from heat. Remove jalapeño stem and garlic skins.
In a food processor, coarsely chop charred vegetables. Transfer to Cocinaware Salsa Crock
and mix in cumin, salt, lime juice and cilantro.
