Red, White & Blue Parfait
1 box H-E-B The Baker's Scoop Angel Food Cake Mix
3 c. fat free Greek yogurt
1/3 c. Hill Country Fare 0 Calorie Sweetener or sugar
1 tsp. H-E-B The Baker's Scoop Vanilla
2 containers (16 oz. each) fresh strawberries, quartered
2 containers (6 oz. each) fresh blueberries
Heat oven to 350°F. Prepare cake according to package directions (only water is needed
) using a 13 x 9-inch baking pan. Cool cake and cut into 2-inch cubes.
Place Greek yogurt in a mixing bowl and beat with an electric mixer on medium
speed 1 minu
te. Slowly add sugar replacement and vanilla and continue to beat 1
more minute. Set whipp
ed yogurt aside.
Layer strawberries, yogurt, cake cubes and blueberries. Repeat 2 more layers.
