Grilled Tomatillo & Serrano Salsa
• grilling mesh
1 lb. medium tomatillos, husks removed
1 serrano pepper
4 large garlic cloves
1 small onion, peeled and cut into wedges
1/4 c. H-E-B Olive Oil
• salt and pepper
1/3 c. loosely packed chopped cilantro leaves
1 tsp. sugar
Heat gas or charcoal grill to high heat (400ºF). Line
baking sheet with foil, place grilli
ng mesh over foil, spray
with no-stick spray and set aside.
2. Combine tomatillos, pepper,
garlic, onion and olive oil in
bowl and toss to coat. Season to taste with salt and peppe

grill for 10 minutes or until skins blacken, turning ve
over once during grilling.
4. Remove from grill and cool. Remove pepper stem. Pla
ce grilled vegetables in blender or food processor bowl and
process 30 seconds. Add cilant
ro and sugar and process
30 more seconds. Season to taste with salt and pepper.
