Spicy Stuffed Blooming Onions
4 large sweet yellow onions, peeled and cut 1/4 slice off top, not root
1 blooming onion cutter
1/2 c. H-E-B Specialty Shred Habanero or Chipotle Cheese
1/2 c. Hill Country Fare Whole Wheat Bread Crumbs
1/2 c. H-E-B Olive Oil
2 Tbsp. H-E-B Texas Originals Beef or Chicken Fajita Seasoning
Cut onions according to manufacturer's instructions for blooming onion cutter. Drain on pa
per towels cut-side down. Combine cheese and bread crumbs in a small bowl. Set aside.
Prepare gas or charcoal grill to medium heat (350°F). Line baking sheet with foil and
place a grilling mesh on top.
Brush each onion on cut side with olive oil and sprinkle with fajita seasoning. Place seas
oned onion on prepared grilling mesh, cut-side down. Remove from tray and place grilling m
esh directly on hot grill and grill onions for 5 minutes. Carefully turn onions over and s
poon 2 Tablespoons of shredded cheese mixture on each onion blossom. Close lid and grill 3
to 4 minutes or until cheese melts.
Place grilled onions on serving platter and cut each onion in half and serve warm.
