Gluten Free Pasta Spinach Salad
1 pkg. (16 oz.) Gluten Free Pasta
6 roma tomatoes, seeded and chopped
1 pkg. (8 oz.) H-E-B Shredded Italian Blend Cheese
4 c. fresh H-E-B Baby Spinach, chopped
2 Tbsp. H-E-B Extra Virgin Olive Oil
1 can (4 oz.) Hill Country Fare Mushrooms Stems & Pieces, drained
• salt & pepper
Cook pasta according to package directions; drain and set aside.
Combine tomatoes, cheese, spinach, olive oil and mushrooms in a large bowl; toss to combin
e. Add cooked and drained pasta and toss to coat. Season to taste with salt and pepper.
Cover with plastic wrap and chill for 15 minutes.
