Grilled Smashed Potatoes

Ingredients

12 small size (2-inch) red potatoes, washed and rinsed

3 Tbsp. Central Market Organics Basil Infused Olive Oil

• fresh cracked pepper & salt

Directions


Place potatoes in a 4-quart pan with enough water to cover potatoes. Bring water to a boil
over high heat, reduce to medium and cook potatoes 25 minutes or until fork tender.
Place a grilling mesh on a sheet pan or tray and spray with non-stick cooking spray. Gentl
y smash each potato, keeping it together as much as possible. Place potatoes on prepared g
rilling mesh and brush with olive oil.
Heat gas or charcoal grill to 350°F. Place grilling mesh with potatoes on grill, close
cover and grill 10 minutes or until golden. Place potatoes on a platter and top each with
fresh cracked pepper and salt.
