Gluten Free Spaghetti with Sun-Dried Tomato Pesto
2 c. (4 oz.) H-E-B Sun-Dried Tomatoes
1/4 c. H-E-B Olive Oil
8 H-E-B Ready, Fresh, Go! Garlic Cloves, quartered
8 c. Hill Country Fare Slivered Almonds
1/4 c. basil leaves
1 pkg. (16 oz.) Gluten Free Spaghetti

Place sun-dried tomatoes and 2 cups hot water in a large microwave-safe bowl. Heat tomato
es and water in microwave on high power for 4 minutes.
Combine tomatoes with water, olive oil, garlic, almonds and basil leaves in food processor
bowl. Process for 1 minute or until tomato pesto is chunky smooth. Heat a large skillet
over medium heat for 3 minutes. Add tomato pesto and 1/2 cup water to skillet. Heat tom
ato pesto for 5-10 minutes, stirring occasionally.
Cook spaghetti according to package directions and drain. Combine hot pasta and sun-dried
tomato pesto in a large bowl; toss to coat. Top pasta with your favorite grated cheese.
