Grilled Cajun Flank Steak
15 - 20 minutes
5 1/2 lb. flank steak, trimmed
2 c. Central Market Oraganics Tomato Purée
* Cajun Rub:
3 Tbsp. Central Market Oragnics Paprika
1 1/2 Tbsp. Central Market Organics Cayenne Pepper
1 1/2 Tbsp. Central Market Organics Oregano
2 tsp. Central Market Organics Cumin & Ground Black Pepper
3/4 c. Central Market Organics Light Brown Sugar
1 Tbsp. Central Market Organics Minced Garlic
Combine rub ingredients in zipper bag, seal and toss to blend. Remove 1/2 cup of rub and s
ave for the sauce. Apply the remaining rub to all sides of the flank steak. Wrap seasoned
flank steak tightly with plastic wrap and refrigerate for 2 hours or overnight.
Charcoal or Gas Grill: Prepare grill so that fire is hot (375°F - 400°F, high sett
ing for gas grills).
Grill flank steak directly on the hot fire 5 to 7 minutes per side for medium-rare. Grill
to the degree of doneness desired.
Sauce: add tomato purée to the remaining rub and stir well. Remove the steak from g
rill and let set 5 minutes before cutting. Slice steak very thin across the grain and plac
e on serving platter. Serve with rub sauce if desired.
