Springtime Tuna and Pasta Salad
8 oz. H-E-B Small Shell or Elbow Macaroni
2 cans (5 - 6 oz. each) Central Market Tuna packed in oil
1 carton H-E-B Ready, Fresh, Go! 3-color Diced Bell Peppers
1 c. finely chopped celery
2 Tbsp. (or more) H-E-B Capers, optional
1/2 c. reduced-fat mayonnaise
1/4 c. Cookwell & Company Olive & Lemon Vinaigrette
1 bag H-E-B Baby Spinach and Arugula
• salt and pepper, to taste
Cook pasta in 4 cups boiling salted water about 10 minutes or until tender. Drain well.
In the meantime, place tuna in a large bowl. Add bell peppers, celery and capers, if using
; stir to mix.
Combine mayonnaise with vinaigrette.Toss with tuna mixture, pasta and dressing; season to
taste with salt and pepper. Serve over spinach and arugula.
