Citrus Grilled Shrimp Salad

2 lb. large Texas Gulf shrimp, peeled and deveined

1 1/2 tsp. H-E-B Texas Originals Chicken Fajita Seasoning

1 box (5 oz.) Central Market Oragnics Herb Garden Salad Mix

2 c. Texas Ruby grapefruit sections

* Vinaigrette:

* juice of 1 lime

2 Tbsp. H-E-B Extra Virgin Olive Oil

1 garlic clove, chopped

3 Tbsp. cilantro leaves, chopped

1 c. Texas orange sections

1/2 tsp. Central Market Organics Cayenne Pepper


Process lime juice, olive oil, garlic, cilantro, orange, and cayenne pepper in a blender t
o a chunky texture (about 1 minute). Refrigerate until ready to use.
Heat gas or charcoal grill to 400°F. Line baking sheet with foil and top with grilling
mesh sprayed with nonstick cooking spray.
Season shrimp with fajita seasoning and place on prepared grilling mesh. Grill for 2 1/2 m
inutes on each side.
Layer salad mix and grapefruit sections on a large platter, arrange grilled shrimp on top,
and add vinaigrette as desired.
