Mediterranean Pasta With Shrimp & Spinach
1 1/2 c. H-E-B Fat Free Sour Cream
1/2 c. crumbled H-E-B Reduced Fat Feta Cheese
1/2 c. chopped fresh basil
3 large roma tomatoes, chopped
3 cloves garlic, peeled and chopped
1 package (13.25 oz.) H-E-B Whole Wheat Spaghetti
1 package (16 oz.) H-E-B Frozen Chopped Spinach
1 bag (32 oz.) Hill Country Fare Large Peeled & Deveined Frozen Shrimp
In a large bowl, combine the fat free sour cream, reduced fat feta cheese, chopped basil,
chopped tomatoes and chopped garlic. Season the mixture to taste with salt and black pepp
er. Set mixture aside.
Cook pasta according to package directions, but after the first 8 minutes of boiling, add
chopped spinach and shrimp to boiling pasta. Allow the water to start boiling again and c
ook the mixture for 2 more minutes. Drain pasta mixture and place in a large pasta bowl.
Add the sour cream mixture to the hot pasta and toss to combine. Serve immediately.
