1/4 tsp. salt & black pepper

2 Tbsp. Easy Orange Habanero Vinaigrette, see recipe

1/2 c. sliced cucumber

5 H-E-B Champagne Tomatoes, thin sliced

2 H-E-B Marinated Artichoke Hearts, sliced

1 thin slice red onion, rings separated

Place the frozen salmon fillet on a microwave safe dish, season with salt and pepper and s
pray with no stick olive oil. Cover the plate with plastic wrap and microwave on High pow
er for 2 minutes or until the salmon is cooked to desired doneness. Discard the skin and

nion and spring mix on a plate. Cover the plate with plastic wrap and keep refrigerated u
ntil ready to serve. Toss the salad before serving.
