Light Mandarin Orange Flan
1 jar (12 oz.) mandarin oranges, drained
1 c. H-E-B Fat Free Half & Half
2 c. H-E-B Fat Free Milk
1 1/2 c. H-E-B Real Egg
1/4 c. shredded coconut (optional)
Heat oven to 325°F. Spray a 13 x 9 baking dish with no stick spray.
Place mandarin oranges sections in a food processor or blender bowl and process for 10 sec
onds. Add the fat free half & half, fat free milk, Real Egg and coconut to the orange sec
tions and process for 15 seconds. Pour custard mixture into the prepared baking dish and p
lace inside a larger baking pan. Fill outside baking pan halfway with water and place in
center oven rack.
3. Bake flan for 1 hour and 15 minutes or until a knife inserted in the center of the flan
comes out clean. Carefully, remove flan dish from hot water bath and cool on a rack. Ch
ill thoroughly before serving.
