Tangy Cod Ceviche

1 bag (12 oz.) H-E-B Wild Alaskan Cod Fillets

1/2 tsp. Hill Country Fare Fajita Seasoning Blend

1/2 c. chopped red onion

1 c. chopped celery

1 large tomato, chopped (2 c.)

1 jalapeño pepper, thin sliced

* juice of 1 lime

4 Tbsp. chopped cilantro

1 Tbsp. H-E-B Extra Virgin Olive Oil

2 c. H-E-B Ready Fresh Go! Spring Mix


Remove the cod fillets from the package, cut into 1/2 inch pieces and place in a microwave
safe dish. Season the cod to taste with 1/2 teaspoon of the fajita seasoning. Reserve t
he remaining fajita seasoning for the Ceviche. Cover the dish with plastic wrap and micro
wave on High power for 3 minutes or until flaky; drain & cool 15 minutes.
Combine the drained cod fish, chopped onion, chopped celery, chopped tomato, sliced jalape
ño pepper, juice of 1 lime, cilantro, remaining fajita seasoning and olive oil in a
large bowl and toss to combine. For each salad, serve 1 1/2 cups Ceviche over 1 cup Spri
ng Mix greens.
