Savory Turkey Veggie Meatballs on Spring Mix

2 Tbsp. H-E-B Olive Oil

1 medium carrot, peeled & shredded

1 small zucchini, shredded

3/4 c. fine chopped onion

4 button mushrooms, fine chopped

1 lb. H-E-B Ground Turkey Breast

1/4 c. whole wheat bread crumbs

1 H-E-B Large Egg, beaten

1 Tbsp. Hill Country Fare Worcestershire Sauce

2 c. Central Market Spring Mix


Heat the oven to 400°F. Line a baking pan with foil and spray with no stick spray and
set aside.
Heat a large heavy bottom skillet over medium heat for 3 minutes. Add the olive oil, carr
ots, zucchini, onion and mushrooms to the hot skillet and stir-fry for 5 minutes. Place v
egetables in a mixing bowl and allow to cool 5 minutes.
Add the ground turkey, whole wheat bread crumbs, beaten egg and Worcestershire sauce to th
e cooked veggies. Mix with your hands and form into 12 meatballs. Place on the prepared
sheet pan and bake on the center oven rack for 15 minutes or until a the internal temperat
ure reads 165°F. Place 1/2 cup spring mix on 4 plates and arrange 3 meatballs on each
and serve.
