Creamy Chicken and Asparagus Salad

Ingredients

* Dressing:

1/4 c. H-E-B Mayonnaise

1/4 c. H-E-B Buttermilk

1 tsp. Central Market Organics Dill or Herbs De Provence

• juice of 1 lemon

• salt and pepper, to taste

* Salad:

1 pkg. H-E-B Ready Fresh Go! Asparagus

4 c. H-E-B Rotisserie Original Chicken, shredded

1/2 c. sliced radishes

2 c. H-E-B Ready Fresh Go! Baby Spinach Leaves

2 large ripe tomatoes, thin sliced

Directions


Combine the mayonnaise, buttermilk, dill or herbs de Provence and lemon juice in a small b
owl. Season the dressing with salt and fresh cracked pepper and set aside.
Place the package of asparagus spears in the microwave oven and microwave on High power fo
r 2 minutes. This is just enough to make asparagus crisp tender. Cut off and discard the
bottom inch of the asparagus and cut into 1-inch sections.
Combine the shredded chicken, asparagus and radishes in a salad bowl. Add the salad dress
ing , toss, cover and refrigerate.
Layer the baby spinach leaves, tomato slices on 4 individual dinner plates and spoon 1/4 o
f the chicken salad on each plate.
