Moroccan Roasted Chicken

1/2 tsp. each: Hill Country Fare Cayenne Pepper, Cinnamon & Ground Cumin

4 Hill Country Fare Bone-In Chicken Breasts, trim excess fat & skin

2 Tbsp. H-E-B Olive Oil

2 large carrots, peeled and cut into 2-inch diagonal slices

2 large zucchini, cut into 1-inch chunks

* zest of 1 lemon

* juice of 1 lemon

2 Tbsp. thin sliced fresh mint leaves


Heat the oven to 400°F. Line a roasting pan with foil and set aside.
Combine the cayenne pepper, cinnamon and ground cumin in a small bowl.
Rub the chicken breasts with 3/4 of the spice rub and arrange on the prepared roasting pan
Combine the remaining rub, olive oil, carrots, zucchini, lemon zest and juice in a bowl an
d toss to coat. Arrange the vegetables around the chicken breasts and roast for 35 minutes
or until the meat juices run clear. Place the chicken and vegetables in a serving platter
and serve.
