Fajita Seasoned Meat Loaf
1 Tbsp. Hill Country Fare Canola Oil
2 c. H-E-B Frozen Fajita Vegetable Blend, thawed on paper towels
2 lb. H-E-B Extra Lean Ground Beef
1 tsp. H-E-B Beef Fajita Seasoning
1/4 c. Central Market Ground Flax Seed
1/4 c. H-E-B Real Egg
1 c. H-E-B Fresher Lasting Salsa
Heat the oven to 350°F. Spray a 2 quart loaf pan with no stick spray and set aside.
Heat a heavy bottom skillet over high heat for 2 minutes. Add the oil and fajita vegetabl
es and stir-fry for 4 minutes or until onions are golden.
Combine the fried fajita vegetables, ground beef, fajita seasoning, flax seed and Real Eg
g in a large bowl (don't over mix). Press the meat mixture into the prepared baking pan a
nd bake on the center oven rack for 35 minutes or until an instant read thermometer reads
170°F. Cool the meat loaf for 10 minutes before removing from the baking dish. Cut i
nto 1-inch slices and serve with Fresher lasting salsa.
