Monterey Jack Spinach Mushroom Scramble
2 tsp. Hill Country Fare Canola Oil
2 tsp. chopped red onion
1 c. thin sliced mushrooms
1 c. H-E-B Ready Fresh Go! Baby Spinach, thin sliced
1/8 tsp. crushed red pepper (optional)
1/2 c. H-E-B Real Egg
1/4 H-E-B Reduced Fat Shredded Monterey Jack Cheese
Heat a heavy bottom skillet over medium heat for 2 minutes. Add the canola oil, red onion
, and mushrooms and stir fry for 3 minutes or until mushrooms are tender.
Add the thins sliced spinach leaves and crushed red pepper, if desired, and stir fry for 2
minutes. Add the H-E-B Real Egg and cook until egg is at desired doneness. Season with
salt and pepper to taste and top with shredded Monterey Jack cheese.
