2 c. H-E-B Frozen Calabacita Blend
1 can (15 oz.) Hill Country Fare Garbanzo Beans, rinsed & drained
1 can (15 oz.) Hill Country Fare Pinto Beans, rinsed & drained
1 tsp. each: Hill Country Fare Chili Powder, Ground Cumin & Garlic Powder
2 c. Central Market Organics Reduced Sodium Vegetable Broth
1/2 c. H-E-B Reduced Fat Shredded Mozzarella Cheese
Combine the tomatoes with their juice, calabacita blend, drained and rinsed beans, chili p
owder, ground cumin, garlic powder and vegetable broth to a large soup pot.
Bring the vegetable soup to a boil over high heat, reduce heat to low and cook uncovered f
or 30 minutes. Season the soup to taste with fresh cracked pepper and serve each with 1 T
ablespoon of shredded mozzarella cheese.
