Egg Salad Stuffed Tomatoes
1 medium tomato
3/4 c. H-E-B Real Egg Product
1 Tbsp. celery, chopped
1 Tbsp. red bell pepper, chopped
1 radish, chopped
2 tsp. H-E-B Mayonnaise
1 Tbsp. chopped cilantro, basil or parsley
• salt and pepper, to taste
Cut the tomato in half lengthwise. Scoop out the tomato pulp from each half, chop, place
in a bowl and set aside.
Spray a small microwave safe bowl or dish with no stick spray. Pour the H-E-B Real Egg in
the bowl, cover with plastic wrap and microwave on High power for 30 seconds or to desire
d degree of doneness. Chop the cooked egg and add to the chopped tomato pulp.
Add the celery, red pepper, radish, mayonnaise and cilantro or selected herb to the bowl;
toss to coat ingredients. Season to taste with salt & pepper. Stuff the 2 tomato halves
with the egg salad and serve.
