1 lb. H-E-B Extra Lean Ground Beef
1 container (7 oz.) H-E-B Ready, Fresh, Go!® Chopped Onion
1 bag (12 oz.) H-E-B Mixed Vegetables
2 cans (15 oz.) H-E-B Fire Roasted Diced Tomatoes
1 package (1.25 oz.) H-E-B Texas Chili Seasoning Mix
* Mashed Potato Ghosts:
1 box (7.75 oz.) Hill Country Fare Complete Instant Mashed Potatoes
¼ c. H-E-B Shredded Parmesan Cheese
¼ c. H-E-B Real Egg
Heat oven to 375°F. Spray 2 quart baking dish with no stick spray, set aside.
Spray large heavy bottom skillet with no stick spray, heat 2 minutes over medium heat. Add
ground beef and onions. Stir-fry until meat and onions are browned (about 4 minutes). Dra
in excess fat.
Remove 24 peas from mixed vegetables for garnish. Add remaining mixed vegetables, diced to
matoes, chili mix and ½ cup water to cooked ground beef. Bring to a boil. Cover ski
llet, reduce heat to low, cook chili 10 minutes, stirring often.
While chili is cooking, prepare instant mashed potatoes according to package directions. A
llow potatoes to cool 5 minutes, stir in Parmesan cheese and egg. Place mashed potatoes in
a large zipper bag, clip one corner ½-inch.
Spoon chili in prepared baking dish. Squeeze potatoes into pointed mounds resembling ghost
s. Place 2 peas in each for their eyes. Bake on center oven rack 25 minutes, serve.
