1 pkg. (6 oz.) Hill Country Fare Yellow Corn Bread Mix
1 ½ tsp. cayenne pepper
½ c. Central Market Organics® Roasted Garlic Mayonnaise
1 container (16 oz.) H-E-B Fresh Gulf Oysters
* Hill Country Fare All Natural No-Stick Canola Spray
4 H-E-B Bakery Submarine Rolls, sliced lengthwise
½ head lettuce, shredded
2 large tomatoes, thin sliced
1 red onion, thin sliced, rings separated
Spray a grilling mesh with nonstick cooking spray and place on
a foil-lined baking sheet.
Heat gas or charcoal grill to medium heat
Combine corn bread mix and ½ teaspoon cayenne pepper in a
medium-size bowl, stir we
ll, and set aside. Combine remaining 1
teaspoon of cayenne pepper with garlic mayonnaise a
nd set aside.
Drain oysters, dip into corn-bread mixture, and arrange on prepared
mesh. Spray the breaded oysters with Hill Country Fare
Canola No-Stick Spray on both side
Grill oysters for 3–4 minutes with lid down, until golden brown.
Spread 1 tablespoon mayonnaise mixture on both cut sides of
each submarine and arrange 4 g
rilled oysters on bottom half of
each. Top oysters with shredded lettuce, sliced tomatoes,
onion. Close sandwich with top and slice each in half.
