1 bag (12 oz.) H-E-B Wild Alaskan Cod Fillets

1 tsp. Hill Country Fare Fajita Seasoning Blend

1 c. chopped red onion

1/2 c. chopped celery

2 medium tomatoes, chopped (2 cups)

1 jalapeño pepper, thin sliced

* Juice of 2 limes

4 tablespoons chopped cilantro

1 Tbsp. tablespoon H-E-B Extra Virgin Olive Oil


Cut cod fillets into 1/2-inch pieces and place in a microwave-safe dish. Season to taste w
ith 1/2 teaspoon fajita seasoning. Reserve remaining fajita seasoning. Cover the dish with
plastic wrap and microwave on high power for 3 minutes or until cod is flaky. Drain, then
cool for 15 minutes.
Combine drained cod, onion, celery, tomatoes, jalapeños, lime juice, cilantro, remaining f
ajita seasoning, and olive oil in a large bowl and toss. Serve ceviche with chips or over
salad greens.
