Cranberry Sweet Potatoes

2 large or 3 medium sweet potatoes (about 2 pounds)

6 Tbsp. H-E-B Butter

1/4 c. brown sugar

1 (12 oz.) bag fresh cranberries

1/2 c. fresh or prepared orange juice


Wash potatoes; prick each side in 4 places with a fork. Place in a microwave-safe dish; co
ver with a lid or paper towel. Microwave on High 6 to 8 minutes or until done. Set potatoe
s aside until cool enough to handle; then peel potatoes and cut into bite-size pieces.
Melt butter in a 4-quart pot over Medium heat; stir in brown sugar to dissolve. Add potat
oes, cranberries and orange juice. Toss to mix. Stir gently and heat until cranberries beg
in to pop open and potatoes are hot. Season with salt, to taste.
