Ingredients

2½ c. H-E-B The Baker’s Scoop™ All Purpose Flour

1½ tsp. Hill Country Fare Baking Powder

1 c. H-E-B Extra Light Olive Oil

1 c. Hill Country Fare Semisweet Chocolate Chips

2 c. H-E-B Powdered Sugar, packed

3 H-E-B Large Eggs

½ c. H-E-B The Baker’s Scoop™ Cocoa Powder

2 tsp. Hill Country Fare Instant Coffee

⅓ c. H-E-B Powdered Sugar, to sprinkle on top of cookies

Directions


Heat oven to 350°F. Line 3 cookie sheets with H-E-B Parchment Paper and set aside.
Sift together flour and baking powder and set aside.
Combine olive oil and chocolate chips in a microwave-safe bowl. Cover with plastic wrap an
d microwave on high power for 1 minute. Stir until chocolate is melted.
Combine 2 cups powdered sugar and melted chocolate in a mixer bowl. Mix on medium speed fo
r 2 minutes. Beat in eggs, one at a time, on medium speed (about 1 minute). Add fl our one
cup at a time on low speed (about 2 minutes). Stir in coco powder and instant coffee.
Drop dough by rounded tablespoons (about 2 tablespoons each) on prepared cookie sheets. Si
ft powdered sugar onto each cookie. Bake for 17 minutes or until golden brown.
