2½ c. H-E-B The Baker’s Scoop™ All Purpose Flour
1½ tsp. Hill Country Fare Baking Powder
1 c. H-E-B Extra Light Olive Oil
1 c. Hill Country Fare Semisweet Chocolate Chips
2 c. H-E-B Powdered Sugar, packed
3 H-E-B Large Eggs
½ c. H-E-B The Baker’s Scoop™ Cocoa Powder
2 tsp. Hill Country Fare Instant Coffee
⅓ c. H-E-B Powdered Sugar, to sprinkle on top of cookies
Heat oven to 350°F. Line 3 cookie sheets with H-E-B Parchment
Paper and set aside.
Sift together flour and baking powder and set aside.
Combine olive oil and chocolate chips in a microwave-safe
bowl. Cover with plastic wrap an
d microwave on high power
for 1 minute. Stir until chocolate is melted.
Combine 2 cups powdered sugar and melted chocolate in a
mixer bowl. Mix on medium speed fo
r 2 minutes. Beat in eggs, one
at a time, on medium speed (about 1 minute). Add fl our one
a time on low speed (about 2 minutes). Stir in coco powder and
