Roasted Sweet Potatoes and Apples
3 lb. sweet potatoes or yams, peeled and cut into 1-inch round slices
1 lb. Granny Smith apples, peeled, cored, and sliced
1 c. chopped sweet yellow onions
2 Tbsp. finely chopped fresh ginger
4 Tbsp. H-E-B Butter
¼ c. H-E-B Blossom Honey
¼ tsp. Central Market® Organics Ground Korint Je Cinnamon
¼ tsp. Central Market® Organics Ground Cayenne Pepper
Heat oven to 450°F. Line a roasting pan with foil and spray
with nonstick cooking spray.
Combine all ingredients in a large bowl and season to taste
with salt. Spread mixture in
prepared roasting pan and roast for
1 hour, stirring every 15 minutes.
