Polenta and Lemon Pepper Pork Loin

2 cloves garlic, minced

1 Tbsp. olive oil

2 medium zucchini, diced

1 large tomato, diced

1/2 cup H-E-B Tomato Sauce

1 Tsp. salt

1 tube ( 16 oz.) prepared polenta, cut into bite-size pieces

* H-E-B Fully Cooked Lemon Pepper Pork Loin, heat according to package instructions


In a medium skillet, sauté the garlic in the olive oil over medium heat for 1 minut
Add the zucchini, tomato, tomato sauce, and salt.
Continue cooking until the zucchini starts to soften, about 5 minutes.
Add the polenta and toss gently to coat. Reduce the heat and cook for several minutes more
, without stirring, until the polenta is heated through.
Serve with H-E-B Fully Cooked Lemon Pepper Pork Loin.
