New Potatoes In Browned Butter
25 to 30 minutes
1 1/2 pounds red potatoes
4 tablespoons butter (1/2 stick)
1/4 teaspoon kosher salt
1/4 cup chopped parsley
Scrub potatoes; pat dry. Peel off a thin strip around middle or "belly" of potatoes, for a
decorative effect, if desired.
Melt butter in a large, heavy skillet over Medium-Low heat. Add salt and potatoes. Turn po
tatoes in butter to coat, cover skillet and cook 25 to 30 minutes, until potatoes are tend
er. Shake skillet frequently during cooking so potatoes cook and brown evenly.
Remove potatoes to a serving bowl; toss with salt, pepper and parsley. Serve hot
