Ingredients

1 pound fresh mushrooms, sliced

2 cans (7 oz each) green chili salsa, drained

1 can (10-oz) diced tomatoes and green chilies, drained

1 can (5 oz) sliced black olives, drained

1 jar (4-oz) chopped pimentos, drained

1 can (10 oz) baby corn, drained (optional)

1 teaspoon salt

1 tablespoon fresh lime juice

1/4 teaspoon freshly cracked black pepper

4 to 5 sprigs fresh cilantro, snipped

Directions


Combine all ingredients except cilantro.
Mix gently.
Cover and refrigerate for three hours or more.
Sprinkle with cilantro and serve.
