1 cup stone ground cornmeal

2 1/2 cups water

1/2 teaspoon salt

1/4 teaspoon crushed red pepper flakes

1/4 cup shredded Parmesan cheese

Coat a 2-quart covered microwave-safe casserole with nonstick cooking spray. Whisk cornmea
l, water, chicken broth, salt and red pepper flakes in casserole.
Cover casserole and microwave on high 12 minutes; stir after 6 minutes.
Remove from microwave and uncover; stir in cheese. Let stand 5 minutes before serving. Pol
enta will thicken as it cools.
