Jalapeno Beets In Vinaigrette
1 orange, peeled and sliced into bite-size pieces
1 jalapeno pepper, seeded and finely chopped
1 to 2 green onions, chopped
1 can (14 1/2 oz) HEB whole beets, drained and rinsed
1/4 cup blush or French vinaigrette dressing
Place all ingredients in a medium-size bowl; toss to coat.
Cover with plastic wrap and chill for 30 minutes or until ready to serve.
Season to taste with salt and pepper
