Cheddar Bacon Mashed Potatoes

4 green onions, chopped

8 slices H-E-B Fully Cooked Bacon, chopped

1 cup H-E-B Cheddar Cheese, shredded

1 cup H-E-B Fresh Buttermilk Ranch Dressing

2 pounds Yukon Gold potatoes


Spray a 2-quart microwave-safe baking dish with nonstick cooking spray; set aside.
Mash and peel potatoes. Cut potatoes into 1 1/2-inch cubes and place in a microwave-safe b
owl. Add 1 1/2 cups water and cover potatoes with plastic wrap. Microwave potatoes on Hig
h power for 12 minutes or until tender. Drain the potatoes and mash with a potato masher o
r electric mixer.
Add the H-E-B Fresh Buttermilk Ranch Dressing, shredded cheese, bacon, and green onions to
the mashed potatoes; stir to combine. Pour the mashed potatoes into the prepared baking d
ish and cover with plastic wrap. You can refrigerate these potatoes over night or heat in
the microwave for 4 minutes until steaming hot before serving
