Salmon Burgers With Dill Tartar Sauce

20 ounces salmon fillets

1 tablespoon chopped fresh dill

3 tablespoons prepared tartar sauce

1/4 teaspoon salt

1/4 teaspoon ground black pepper

4 sesame seed Kaiser rolls

* bibb, boston, or butter lettuce leaves

* red onion slices

1 lemon

1 tablespoon chopped fresh dill

1/2 cup prepared tartar sauce


Place salmon on a clean cutting surface, skin-side down. Use a sharp knife to cut salmon f
lesh from skin. Discard skin. Cut salmon into 1-inch cubes.
Chop 1 tablespoon dill. Place dill, salmon, 3 tablespoons tartar sauce, salt and pepper in
a food processor. Pulse on/off to process until coarsely ground. Spread mixture out on a
plate; cover and refrigerate (or place in freezer) 5 to 10 minutes until chilled and easy
to handle.
Meanwhile, prepare dill tartar sauce. Zest lemon peel to make 1 teaspoon. Chop dill. Combi
ne tartar sauce with lemon zest and dill and set aside. Split Kaiser rolls.
Form salmon mixture into 4 patties, 1/2-inch thick. Heat a large non-stick skillet over me
dium-high heat. Pan broil patties (cook without oil) 4 to 5 minutes per side, in 2 batches
While salmon cooks, lightly toast rolls in broiler or toaster oven. Spread dill tartar sau
ce on cut sides of rolls. Layer burgers, lettuce and onion on bottom halves of rolls; top
with remaining halves. Serve immediately.
