Pan-Fried Seafood Serrano
2 T canola oil
6 (4 oz each) White fish fillets
2 cups Instant long grain rice
1 Large onion, peeled cut into 1-inch slices and separated
1 Tomato cut into wedges
1/3 cup H-E-B Texas twist serrano ranch dressing
Heat a large skillet over medium heat for 2 minutes. Add oil and fry fillets on each side
for 2 minutes. Remove fillets from skillet and set aside. Add rice and onions in same skil
let and stir-fry for 2 minutes over high heat until the rice is golden.
Add fish fillets, tomato wedges, HEB Texas Twists Serrano Ranch Dressing and 1/2-cup water
and bring mixture to a boil over high heat. Reduce heat to medium, cover skillet and cook
Seafood Serrano for 10 minutes. Season to taste with salt and pepper. Serve hot.
