1 1/4 pounds Alaskan cod fillets
* non-stick cooking spray
1/2 medium onion, thinly sliced
1/2 cup light sour cream
1/2 cup low fat mayonnaise
2 tablespoons dry sherry
4 teaspoons fresh lemon juice
1/4 to 1/2 teaspoon curry powder
Heat oven to 375 degrees.
Cut cod into 4 portions. Coat a shallow baking dish with cooking spray. Scatter onion over
bottom of dish and top with cod fillets.
Stir sour cream and remaining ingredients together in a bowl until smooth. Spread sauce ev
enly over top of cod.
Bake fish 20 to 30 minutes, depending on thickness, until center turns opaque. Garnish wit
h thin slices of lemon and parsley, if desired.
