1 1/2 to 2 Halibut steaks, cut 3/4 to 1-inch thick
1/4 cup flour
1/2 teaspoon Each salt and pepper
1/8 teaspoon nutmeg
1 tablespoon oil
1 tablespoon butter
1/2 cup orange juice
4 teaspoons Worcestershire sauce
4 teaspoons fresh lemon juice
Blend flour, salt, pepper and nutmeg in a shallow bowl.
Dust each side of halibut steaks with flour mixture.
Heat oil and butter in a large, non-stick skillet over Medium-High heat.
Cook halibut 4 minutes per side if ¾-inch thick, or 5 minutes per side if 1-inch thick.
Combine orange juice, Worcestershire and lemon juice; add to skillet.
Raise heat to High and bring liquid to a boil.
Cook for 2 minutes until sauce thickens and glazes fish.
Spoon sauce over fish while cooking.
