Chinese Shrimp Fried Rice

1/4 pound shelled, deveined Shrimp

1 cup bean sprouts

2 green onions

3 cups cold cooked rice

1/4 cup water

2 tablespoon soy sauce

1/2 teaspoon each sugar and salt

1 egg

4 strips bacon


Cut shrimp into 1/2-inch pieces and chop bean sprouts and onions.
Sprinkle rice with cold water and stir to separate into individual grains.
Mix soy sauce, sugar and salt in a small bowl.
Beat the egg.
Fry bacon in a large, deep non-stick skillet over Medium-High heat until crisp.
Remove, drain and crumble.
Reserve 2 tablespoons bacon drippings.
Pour egg into skillet and scramble.
Remove, cut into thin strips and set aside.
Heat reserved bacon drippings.
Stir fry shrimp 2 minutes.
Stir fry rice, sprouts, onions and bacon with shrimp 3 minutes more.
Pour soy sauce mixture over rice; add egg and quickly stir to blend.
Serve hot
