Blackened Salmon Croquettes

2 large Cans pink salmon

2 eggs

1/2 cup Diced peppers

1 cup Bread crumbs plus an additional cup for coating

4 Tbsp. H-E-B blackened seasoning

* Vegetable oil


Combine salmon, eggs, peppers and 1 cup of bread crumbs in a large bowl. Mix very well and
set aside.
In a shallow dish mix together remaining cup of bread crumbs and seasoning.
Warm 2 tablespoons of oil over medium heat in a non stick skillet.
Take 2 heaping tablespoons of salmon mixture and form into a patty. Bread patty with seaso
ned crumbs and place in skillet. Do not over fill skillet with patties. Cook on each side
until golden brown
