Baked Lemon-Ginger Grouper
5 to 7 minutes
1 pound grouper fillets
2 tablespoons vegetable oil
2 tablespoons butter
2 Tbsp. fresh lemon juice
1 tablespoon grated fresh ginger
* salt and fine-ground black pepper, to taste
Heat oven to 450 degrees F.
Add oil, butter, lemon juice and ginger to a shallow casserole or baking dish large enough
to hold fish.
Heat dish in oven 5 minutes, until butter melts and just begins to sizzle.
Remove dish from oven and turn fish in lemon-ginger mixture to coat both sides.
Season with salt and pepper.
Return to oven and bake fish 5 to 7 minutes, until the color turns from translucent to opa
que (white). Avoid cooking fish until it “flakes,” which indicates fish is becoming dry.
