Chicken And Mushroom Sandwich On Ciabatta
3 H-E-B Frozen Fully Cooked Italian-Style Seasoned Chicken Breasts
6 ounces babybella mushrooms, sliced
1 medium sweet onion, sliced
2 tablespoons butter
1/2 cup Marsala wine
1/2 teaspoon ground black pepper
4 ounces fontina cheese, thinly sliced
1 loaf ciabatta bread
Heat oven to Broil. Microwave chicken according to package directions. Cut chicken crosswi
se into thin slices.
Meanwhile, slice mushrooms and onion. Melt butter in a large skillet over Medium-High heat
. Sautèacute; mushrooms and onion 7 to 9 minutes until tender.
Add chicken strips and Marsala to skillet with mushrooms and onion. Season with pepper; co
ok and stir 3 to 5 minutes until wine is almost evaporated. Remove skillet from heat.
Split ciabatta bread in half horizontally. Toast both sides lightly under broiler, 1 to 2
minutes. Spoon chicken mixture over bottom half of bread loaf; top with cheese slices. Ret
urn to broiler briefly to melt cheese, if desired. Put top bread half over bottom; cut int
o 4 portions and serve while hot
