1 cup packed fresh basil leaves
1 clove garlic
1/2 cup Parmesan cheese
2 tablespoon olive oil
1/2 c. light mayonnaise
6 medium potatoes, cooked and cubed salt to taste
* freshly ground black pepper to taste
Process basil leaves and garlic with metal blade.
Add cheese and oil. Blend until smooth.
Add mayonnaise and blend well.
Toss potatoes with pesto mixture in a large bowl. Season with salt and pepper.
