6 medium white potatoes, boiled, peeled, and cubed
6 hard boiled H-E-B eggs, peeled and diced
1 cup chopped onion
1/2 cup chopped dill pickle
1/2 cup chopped red or green bell pepper or pimentos
1 cup mayonnaise, regular, low fat, or fat-free
Place 6 medium size potatoes into a large pot. Fill pot with enough water to cover one inc
h over potatoes. Bring water and potatoes to a boil over high heat and cook for 30 minutes
, or until they are fork tender. Drain, rinse, peel and cube potatoes.
Combine potatoes, eggs, onion, pickle, bell pepper and mayonnaise in a large bowl. Toss to
coat. Season to taste with salt and pepper.
Cover with plastic wrap and chill for 30 minutes or more
