Heart Of Palm Pyramid Salad
1 (16 ounce) jar H-E-B Harvest Moon Heart of Palm, drained & thin sliced
1 (6 ounce) bag baby spinach leaves or spring mix salad
1 large tomato
1 (4 ounce) jar H-E-B Harvest Moon Diced Pimientos, drained
1 cup H-E-B Mexican or Italian Blend Shredded Cheese
1/2 cup Hill Country Fare Thousand Island Salad Dressing
Cut heart of palms in half and set aside. Spread baby spinach leaves in salad platter or 6
individual salad plates. Arrange tomato wedges in pairs in platter or two per salad plate
. Stack 3 heart of palm sections in center of tomato wedges. Top salad with diced pimiento
s and shredded cheese.
Cover salad with plastic wrap and chill for 15 minutes or more. Top salad with Thousand Is
land dressing before serving.
