Glazed Cranberry Walnut Holiday Salad
1/2 cup Hill Country Fare Walnut Pieces
1/4 cup Sugar or 6 packets H-E-B BetterSweet
2 cups Fresh Cranberries
1 bag (16 oz.) H-E-B Frozen Sweet Pineapple Chunks, thawed
1 jar (12 oz.) H-E-B Harvest Moon Mandarin Orange Sections, drained
1 bag (5 oz.) H-E-B Ready Fresh Go!® Baby Spinach
Heat skillet over high heat for 2 minutes. Add walnuts, sugar, and cranberries and reduce
heat to medium. Stir the mixture frequently until sugar melts and glazes walnuts and cranb
erries (about 5 minutes). Place mixture on a sheet of foil sprayed with nonstick cooking s
pray and cool.
Combine pineapple chunks and drained mandarin orange sections in a large salad bowl. Top
the pineapple mixture with salad greens. Cover salad with plastic wrap and refrigerate for
15 minutes or until ready to serve.
Sprinkle the glazed walnuts and cranberries on top of the mixed salad greens, toss gently
, and serve. Dressing is not required.
