Cranberry Pineapple Holiday Salad
1/2 cup sliced almonds
1 cup H-E-B Harvest Moon Triple Cranberry Sauce
1/4 cup sugar
1 (20 ounces) can Hill Country Fare Pineapple Chunks, drained
1 (10 ounce) can H-E-B Harvest Moon Mandarin Orange Sections, drained
1 (10 ounce) bag mixed salad greens (6 cups)
Heat a skillet over high heat for 2 minutes. Add almonds and sugar to hot skillet, reduce
heat to medium high. Stir almonds constantly until sugar melts and glazes almonds to a go
lden brown (about 2 minutes). Place glazed almonds on a sheet of foil to cool.
Combine whole cranberry sauce, drained pineapple chunks, and drained mandarin orange secti
ons in a large salad bowl. Top cranberry mixture with mixed salad greens. Cover salad with
plastic wrap and refrigerate for 15 minutes or more.
Before serving, sprinkle glazed almonds on top of mixed salad greens and toss gently to mi
x ingredients.Salad dressing is not required.
